A unique type of vodka is being featured at the Sarnia Fusion food and alcohol show this weekend.
Vodkow is a 40 per cent vodka made at Dairy Distillery in Almonte, and is made using milk permeate.
Steph Towers, a dairy farmer in Middlesex County who works part-time at the distillery, said the permeate is usually wasted, but they've found a good use for it.
"Typically we have no end-use for this, we actually have to throw it out and dairy farmers pay a disposal fee for that," said Towers. "These guys in Almonte have figured out how to add a specialty yeast to that product, ferment it down for seven days, distill it, and make this awesome clear vodka that is sugar-free, gluten-free, and lactose-free."
Towers said the product is lactose-free because the sugar that's in the lactose is used up in the fermentation process when added to specialty yeast.
She said they've been making Vodkow for about a year, and it's also available at the LCBO.
Sarnia Fusion on Friday and Saturday at DeGroot's Nurseries on London Line is a sell-out.
